A brilliant baked oat breaky!

Ingredients

2 ripe bananas

450g coconut or almond milk

1 tablespoon melted coconut oil

1 teaspoon vanilla extract

1 tablespoon flax seed

2 tablespoons date or maple syrup

160g rolled old-fashioned oats

1 teaspoon cinnamon

1 teaspoon baking powder

1/2 teaspoon sea salt

200g dark chocolate chips

Cooking spray

Sliced Fruit - extra banana, strawberries, raspberries

Directions
Preheat the oven to 180°C and spray a baking dish with cooking spray.
In a large bowl, use a fork to mash the bananas until smooth.
Add in the coconut milk, melted coconut oil, vanilla extract, flaxseed and syrup.
Add the oats, baking powder, cinnamon, and salt. Stir until combined.
Add 3/4 of the dark chocolate chips and mix well.
Carefully pour oatmeal mixture into the prepared baking dish.
Flatten the oat mixture with a knife or spatula and top with the sliced fruit and then scatter the remaining chocolate chips.
Bake for 35 to 40 minutes, until the top is nicely golden.
Remove from the oven and let cool for a few minutes before serving.
Drizzle each portion with a little extra syrup and enjoy!
