Ingredients

190g Plain Flour

1 Tsp Baking Powder

1 Tsp Cinnamon

1/2 Tsp Salt

1 Tsp Vanilla Extract

3 Ripe Bananas

65g Vegan Butter (melted)

80g Caster Sugar

50g Light Brown Sugar
-
120g Pecan (roughly chopped)

70ml Oat Milk
Directions
Preheat the oven to 180 Degrees C.
Place the Sasstainable silicone cupcake cases into cupcake baking tray and set aside.
In a large bowl combine plain flour, baking powder, cinnamon, and salt.
In a separate bowl, mash bananas with a fork. Add the melted vegan butter, caster sugar, light brown sugar, oat milk, and vanilla extract to the mashed banana and whisk until all combine.
Add the wet mixture to the dry and mixture and gently stir until a batter is formed.
Add most of the chopped pecans to the mixture (leaving some to sprinkle on the top) and mix until evenly distributed.
Spoon the mixture into the Sasstainable silicone cupcake cases, until each are roughly 3/4 full.
Top with remaining pecans and bake for 20-25 minutes until golden brown and a toothpick inserted in the middle comes out clean.
Remove from oven and let cool 10 minutes in the cupcake baking tray before transferring to a cooling rack to cool completely. Enjoy!
