-
60 g vegan chocolate chips
-
4 tbsp vegan butter, cut into 1 tablespoon pieces
-
60 g aquafaba (the brine of a can of chickpeas)
-
30 g flour
-
3 tbsp water
-
1/2 tsp vanilla extract
-
30g plain flour
-
60g icing sugar
-
1/4 tsp baking powder
Directions
Preheat oven to 200c. Grease 6 ramekins and set to one side.
- Melt together the chocolate and butter stirring until completely melted
In a separate bowl stir the chickpea flour and water until thick and gooey.
Stir in aquafaba and vanilla.
Add this new mixture to the melted chocolate and gently combine.
Sift in the flour, icing sugar and baking powder. Fold in gently until a thick batter is formed.
Divide the mixture evenly between the ramekins and bake for 12-14 minutes until the edges are firm but the middle is still soft.
Remove from the oven and let sit for 1 minute before turning out onto plates.
Serve with strawberries and non dairy cream or ice-cream and enjoy!
Recipe Note
Aquafaba is the liquid that comes in a tin of chickpeas. Next time you open a can, drain the liquid and keep it!
