Thursday 17th June marks the Alzheimer's Society Cupcake Day which encourages people to spend time with loved ones and raise what they can to support people affected by dementia. And we have just the recipe for you to try....

Ingredients

2 Ripe bananas (mashed)

130g Coconut Sugar

1 tsp Cinnamon

35g Melted Coconut Oil

50ml Coconut Milk

1 tbsp Vanilla Extract

2 tbsp Biscoff Spread

170g Plain Flour

1 teaspoon Bicarbonate of Soda

1/2 tsp salt

60g Dark Chocolate Chips

40g Vegan Spread
-
100g Icing Sugar
-
125g Biscoff Spread
Biscoff Frosting
Directions
Mix together all cupcake ingredients (apart from the chocolate chips) until smooth and creamy.
Fold in the chocolate chips and add 2 heaped tbsp of mixture into 12 cupcake cases.
Bake for 25mins at 180C!
Remove from the oven and leave to cool completely.

Meanwhile, whisk together the frosting ingredients until light and fluffy.
Decorate the cupcakes and enjoy!
