Ingredients

2 Ripe bananas

130g brown sugar

1 tsp Cinnamon

35g Melted Coconut Oil

50ml Coconut Milk

1 tbsp Vanilla Extract

2 tbsp Nut butter (optional)

170g Plain Flour
-
1 teaspoon Bicarbonate of Soda

1/2 tsp salt80g Dark Chocolate Chips

50g Vegan Spread
-
150g Icing sugar

30ml Dairy Free Milk
For the frosting
Directions
In a mixing bowl add the banana, brown sugar, cinnamon, coconut oil, coconut milk, vanilla extract, nut butter, flour, bicarbonate of soda and salt.
Use an electric whisk and mix until fluffy. Then stir in the dark chocolate chips.
Transfer 2 tbsps mixture into each cupcake case and bake in a preheated oven at 180C for 30 mins. Leave to cool.
Make the frosting by creaming together the ingredients.
