Ingredients

35g oats

300g plain flour

2 1/2 teaspoons of ground cinnamon

1/2 teaspoon of ground nutmeg

1/4 teaspoon of ground cloves

50g light brown sugar

70g coconut sugar
-
1 3/4 teaspoons of baking powder

1 teaspoon of vanilla extract

20ml golden syrup

2 large carrots (peeled and grated)

50g crushed walnuts
-
300ml dairy free milk

230g dairy free cream cheese
-
110g icing sugar
-
50g corn starch

Handful of walnut crumbs

Directions
Preheat oven to 180c and line a cupcake tray with your silicone cupcake cases.
In a bowl combine the oats, plain flour, ground cinnamon, nutmeg, cloves, lightbrown sugar, coconut sugar, baking powder, grated carrots and crushed walnuts.
In a separate bowl combine the golden syrup, vanilla extract and dairy free milk.
Pour the wet ingredients into the dry and combine well. Split the mixture between the cases until they are just over 3/4 full.
Place in the oven for 20-25 minutes until a toothpick comes out clean.
Whilst they're in the oven, prepare the frosting by combining the ingredients together using an electric whisk. Empty the mixture into a piping bag and place into the fridge.
Once the cupcakes have cooled pipe on the frosting and decorate with walnut crumbs and decorations of choice. Enjoy!
