It's always a good day to be a burger day......and an even better day if you switch your normal burger out to try these Falafel-style bean burgers

Ingredients

1 large red onion (diced)

2 garlic cloves (crushed)

1 can of chickpeas (drained and rinsed)

2 tablespoons of gram flour

2 teaspoons of ground cumin

1 teaspoon of paprika

Juice from 1/2 lemon

2 tablespoons of fresh chopped parsley

1 tablespoon of hummus
-
2 spring onions (diced)

1 teaspoon of almond butter
-
1/2 teaspoon of harissa paste

1/2 teaspoon of salt

Vegetable/sunflower oil for shallow frying the burgers

4 burger buns
-
Vegan mayo
-
Fresh rocket
-
Sliced tomatoes
-
1 avocado (mashed)
-
Fresh salsa
For the burger patties

Directions
First add the chickpeas to a blender and pulse for a few seconds until large crumbs form. Then add the rest of the ingredients for the burgers and pulse again until all combined.
Form into 4 patties and place on a baking tray lined with your reusable silicone mat. Cover the tray and place in the fridge for a minimum of 30 minutes or overnight.
When ready to cook add enough oil to cover the base of a large pan and place it on a medium to high heat.
Add the burgers and cook for a few minutes on each side. Be careful as the oil may spit. Once cooked place the burgers on some kitchen towel to absorb any excess oil.
Spread mayo on the burger buns and then stack with the fillings in your desired order.
