Pancake Day is better than Christmas really when it means you can justify eating pancakes for every meal of the day right?!
Here's a recipe to try that you can enjoy for breakfast…or lunch, or dinner!

These marbled pancakes look fancy but are actually very simple to make.
Ingredients

2 ripe bananas (mashed)

400ml dairy free milk

1 teaspoon of vanilla extract

275g self-raising flour

1 teaspoon of ground flaxseed

10g cacao powder
Directions
Begin combining the mashed banana, dairy free milk and vanilla extract.
Sieve the flour into the same bowl and add the flaxseed. Combine. Pour half of the mixture into a separate bowl and combine with the cacao powder.
Heat a large saucepan on a medium heat and add some oil of choice if not using a non-stick pan. Add a tablespoon of white batter then add 3/4 of a tablespoon of the chocolate mixture into the centre of the white batter. Then repeat with 1/2 a tablespoon of white into the chocolate and finally 1/4 of chocolate.
Cook for a couple of minutes until bubbles start to appear and then flip. Cook for 45-60 seconds on the other side.
Recipe Note
Serve with fresh berries, desiccated coconut, and peanut butter.
