Ingredients

150g Flour

1 tsp Baking powder

1/2 tsp baking soda

1/4 tsp fine sea salt

1 tsp cinnamon

1/2 tsp ground nutmeg

175g Pumpkin Purée

120g caster sugar
-
55g Brown sugar
-
125ml vegetable oil
-
1 tsp vanilla extract

50-60ml dairy free milk
-
500g icing sugar
-
125g vegan butter
-
1 tsp vanilla extract
-
200g vegan cream cheese
For the cupcakes
For the frosting
Directions
Preheat the oven to 160C
Mix all cupcake ingredients together in a bowl.
Transfer the mixture into a cupcake tray lined with 12 Sasstainable silicone cupcake cases
Bake for 20 minutes.
While they're cooking, mix your frosting ingredients.
Allow cupcakes to cool, then ice them with the frosting mixture.
Recipe Note
Try topping the cupcakes with pumpkin seeds for a little extra crunch!
