A plant-based twist on the classic egg salad sandwich.
Ingredients

1 Tin Chickpeas (drained and rinsed)

1/4 Red Onion (finely chopped)

1 Small Pickled Cucumber (finely chopped)

2 Tbsp Vegan Mayo
-
1/2 Tbsp Wholegrain Mustard

1 Tbsp Fresh Dill
-
1/4 Tsp Turmeric
-
Salt and Pepper (to taste)

Wholegrain Bread
-
Spinach
-
Cress
Directions
Add the chickpeas to a bowl and mash them with a fork, keeping some of them whole.
Add the red onion, pickled cucumber, vegan mayo, wholegrain mustard, fresh dill and turmeric and mix together.
Season well with salt and pepper and mix again.
Make your sandwich, starting with a slice of wholegrain bread then a handful of spinach followed by some of the chickpea salad filling, then a layer of cress and another slice of bread.
Cut in half and pop them in your Sasstainable silicone pouch, take to the park and enjoy 🙂
