Orzo Paella, perfect for summer evenings!

Ingredients

1 tablespoon of extra virgin olive oil

1 white onion (diced)

3 garlic cloves (crushed)

1 courgette (sliced and halved)

1 large pepper (sliced)

Pinch of saffron

1/2 teaspoon of paprika

400g dried orzo
-
650ml vegetable stock
-
8 vegan chorizo sausages
-
100g fresh or frozen peas
-
Juice from 1/2 lemon
-
Fresh parsley to garnish
Directions
Begin by heating a large pan on a medium heat. Add the oil and onion and cook for a few minutes before adding the garlic, courgette and sliced pepper.
Next add the orzo, paprika, saffron and vegetable stock. Combine and leave to simmer stirring every few minutes for approximately 15-20 minutes.
Meanwhile heat a smaller pan on a medium heat. Add a drizzle of oil following by the chorizo sausages. Cook as per instructions per slicing and adding to the paella. Add the peas at this point also.
Simmer the paella for a few minutes more until the peas are cooked and the orzo has absorbed most of the stock before garnishing with fresh parsley, and squeezing over the lemon. Enjoy!
Recipe Note
Make sure the orzo doesn't dry out by constantly stirring. You can keep leftover paella in one of your Sasstainable pouches for a few days afterwards - reheat in the microwave directly in the pouch to keep it moist.
